French Onion Soup’s A Winner!

We received this thank you note from one of our couples whom we catered at thier wedding on NYE this year.

We thought some of you might like us to share the secret to such a great dish as prepared by our head chef and Co-Director James. This dish can be found on our three course meal menus for 2010.

French Onion Soup – Serves 6

700grms Spanish white onions (Thinly sliced)

100grms butter

2pints of good beef stock (or vegetable stock)

250ml red wine

50ml Port (or Brandy)

Salt & Pepper to taste

French Bread cut into one inch round slices

150grms Grated Mature Cheddar or Gruyere Cheese

Melt butter in saucepan over a medium/low heat. Add sliced onions and soften for 20 minutes being careful not to burn. Add beef stock and red wine and continue to cook on a low heat for a further hour until onions are completely soft and translucent. They should have taken on the colour of the stock and wine. Add port and salt and pepper to taste and cook for a further 12-15 minutes.

Whilst the soup is cooking, cut bread into one inch round slices (1-2pp). Place on a baking tray, brush with olive oil on both sides and bake in pre heated oven at 200 degrees for 6 minutes each side or until golden brown.

To serve; Ladel each serving of soup into bowls placing crouton(s) on top and a generous handful of grated cheese on top of the crouton allowing to melt into the soup.

World Cup BBQ’s

I hope that you all enjoyed a great Easter break and had plenty of Chocolate.

We have been receiving quite a few calls from clients who wish to organise World cup events so that they can be suitably catererd for whilst whatching their chosen country in thier pasth to “victory” at the football world cup this summer.

Spring is coming.

Total Hospitality has been a busy bunny this week. With many catering site visits being carried out . Amongst other places, we have been to South Wales and in case you were not aware, the toll at the Seven Bridge does not take card payments so any of you planning a trip to Wales in the near future, make sure you have at least £5.50 in cash on you before you travel. Fortunately they do take cheques so all was well with the world and we carried on our merry way into beautiful Wales.

With the arrival of the first bit of sunshine that we seem to have had in a while, we have had a surge in enquiries for BBQ’s and summer Balls. This is great news as we do love to do as many BBQ’s as possible over the Spring and Summer months. Who wouldn’t enjoy working outside, serving   great food to lovely guests.

Our new “suggested venues” page on our website also seems to have gone down a hit as we have had many potential clients enquiring for the use of our services with a view to also booking one of our suggested venues.

The new 2010 menus also seem to be appreciated with our pricing remaining the same per person for 2010 but with a wider choice of fresh dishes along with the old classics; which we feel provides each client with a great selection of dishes to offer  friends, family and colleagues.

The chefs have also had fun with several new enquiries whom have asked for bespoke menus to be designed for them. One for a Barn Dance in Berkshire, another for a Caribbean BBQ in Lancashire and another for a Mediterranean style three course meal in Surrey. The chefs love the opportunity to inject some ideas into different dishes especially when they end being so good they are added to our existing menus.

We are all looking forward to another great weekend and are in London catering at a lovely couples Wedding  and Aylesbury catering for a company’s new product launch on Saturday  followed by Bournemouth on Sunday for a family Christening.

Doesn’t time fly!

The team at Total Hospitality and I just can’t believe that we are nearly at the the end of February already. Doesn’t time fly when you are having fun!
With January being the start of a fresh and sparkly New Year, we always feel very excited about the coming twelve months and all the clients that we are to provide catering and hospitality for.
We have already had some lovely weddings that we have catered for. One in early January in the deep snow where, among other things we were serving mulled wine outside the church followed by a warming winter three course menu. Another in London where we served our Traditional three course Roast menu in the grounds of a big beautiful church followed by our favourite; bacon butties in the evening.
We have also had fun catering for some fabulous private parties. We have been to a surprise Birthday party where the birthday boy was celebrating his 50th birthday and they enjoyed a menu as selected by his wife from our spanking new 2010 finger buffet menu.
Our new drinks menus are going down a hit too with many clients who had booked our services now adding on a drinks package since being sent details of our new drinks options.
We are also very busy getting all those site visits carried out for the coming months in advance of our clients weddings, private and corporate events. If you haven’t booked us in for a site visit yet, please do get in touch so we can get you booked in.
Ahhh, well that is it for toady folks, i think i had better get back to work and wish you all a great weekend. I might have to go downstairs and pinch one of those freshly baked rolls that the chefs have just pulled out of the oven first though!!
